Red and Yellow Pepper Purée...

This is my favorite Raw side dish and as always really easy to do, you will need a Mixer and plan the night before

1/ Place 1 cup of raw unsalted organic cashews in a bowl of water overnight

2/ Next morning rinse them and place in a mixer

3/ Add 1 red pepper and 1 yellow pepper sliced in the mixer

4/ Add 1 avocado and 1/4 red onion

5/ Add a pinch of salt , pepper, paprika and ginger powder

6/ Add 1/4 cup of Coconut milk

7/ Blend it all till it's purée

8/ Serve as side to salad or as deep with carrots, cucumber, jicama sticks
