Vegan Diner : Vegetable Tajine

You will know if you have been following my blog that to me holidays rhymes with mediterranean food.

Here is the recipe of the Tajine we had for Christmas Eve diner...

Honestly serves 6 people...

You need a big dutch oven like le Creuset or lodge...

1/ Fry in olive oil 2 red onions, 3 multi colored Peppers , 6 Garlic cloves , all ingredients cut in small pieces about 10 minutes

2/ Add spices previously mixed together:

1big spoon of coriander grain, of Cumin grain, of ginger powder, 1/2 Small spoon of Cinnamon, 2 big spoon of sugar, 1 big spoon of salt, some safran

3/ While this cook boil 6 tomatoes in 1L of water about 15 minutes... let it cool

4/ Cut 2 eggplants, 2 zucchinis in large rectangles add to pot

5/ Cut 1 fennel in 6 quarter add to pot cook and steer often about 15 minutes ...

6/ Once the tomatoes and water have cooled down remove the skin, blend together and add to pot

7/ Add 1 preserved lemon cut in small cubes and 1/2 cup of green olives

8/ Cover and cook for 1 hour

Serve with fresh cilantro on top , Israeli couscous or quinoa...
